Last week I completed a ‘Customer Satisfaction Survey’ and at the end was emailed a voucher for a £30 discount on a Hello Fresh delivery box. It was a great offer so I thought I’d give it a go.

I can totally see the benefits of these boxes… delicious recipes with all the ingredients – delivered to your door. But of course, that convenience comes at a price.

Hesitant to spend a fortune on something I was unfamiliar with, I opted for the Classic Box of 3 meals for 2 people. The cost? £39. Thank goodness for that voucher.

At that price, I think it’s a great treat, but certainly not something I could continue with on their weekly subscription service. (Be sure to update your preferences so you are not auto-billed each week). The first meal I cooked was their Summertime Pork Schnitzel with Salad, New Potatoes and Capers. I’ve never had capers before. And never will again. I guess they are like olives – an acquired taste. I never got to like olives either.

As with any recipe, I think we all add our own little touch to it. If you want to have a go at this recipe yourself, here is my slightly modified version. And no capers.

Slimming World fans – I’ve also added some notes below with different ways you can further switch this up if you are looking to save a few extra syns!

Panko Pork Schntizel

Ingredients
  • 300g pork fillet
  • 50g panko breadcrumbs
  • 4 tbsp of sour cream
  • 360g new potatoes
  • 2 large handfuls rocket (arugula) leaves
  • 1 tbsp dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 tsp granulated sugar
  • 2 tbsp olive oil
  • Salt and black pepper to season
  • ½ lemon
Instructions
  1. Bring a large pan of water to the boil and add a ¼ tsp of salt. Cut the potatoes into quarters and cook in the salted, boiling water for 10-15 minutes until tender.
  2. Place your hand flat on top of your pork fillet and slice in half from the side and further cut each piece in half widthways. Lay the pork slices between 2 sheets of clingfilm. Hit the pork using a rolling pin until it is 1cm thick.
  3. Put the breadcrumbs in a large, shallow bow and add ¼ tsp of salt and a generous amount of black pepper. Coat each fillet evenly in a tbsp of sour cream. Press each fillet into the breadcrumbs until completely coated.
  4. Heat 1 tbsp of oil in a large frying pan. Lay the breaded pork schnitzels in the pan and cook for 3-4 minutes each side.
  5. Drain your potatoes.
  6. In a bowl, whisk together the Dijon mustard, balsamic vinegar, 1 tbsp olive oil and sugar. Season with a little salt and pepper.
  7. Plate your leaves, top with scattered warm potatoes and drizzle generously with vinaigrette.
  8. Serve the schnitzels on the potato salad and serve with a wedge of fresh lemon.

Slimming World syns:

50g panko breadcrumbs = 9 syns, 4 tbsp sour cream = 4 syns, 2 tbsp olive oil = 12 syns. Total syns = 25 syns shared between 2 people.

This dish was really quite delicious and I’d quite happily use 12 syns for such a tasty meal. However, if you are looking to cut back on some of the syn values, here a few ways in which you can switch this recipe up. Of course, it won’t taste quite the same – but lovely nonetheless.

– Swap panko breadcrumbs for homemade wholemeal breadcrumbs – syn free when using your daily HexB allowance

– Use a beaten egg instead of sour cream to coat your pork – 0 syns

– Substitute the olive oil dressing for a store bought fat free alternative – low syns

Summer temperatures are finally upon us… and with that comes long, lazy dinners in the garden. You’ve gotta soak up the light, warm evenings whilst they last! Finding quick and nutritious dinners the whole family will enjoy can be challenging, and I don’t want to be stuck in the kitchen any longer than necessary. Bursting with flavour and nutrition, this masala and mango marinaded chicken with salad can be on the plate in under 20 minutes. #winner.

Groovy Food agave masala marinade

I’ve chosen to marinade chicken, but this would also work equally well with a firm white fish, like monkfish, as a tasty glaze to BBQ’d meat or delicious simply served as a dip.

  • Chicken consists of high-quality protein and a relatively low amount of fat. The fat is mostly of the unsaturated type, which protects against heart disease.
  • 100 grams of skinless, boneless breast has 31g of protein – more than half the recommended daily allowance of 46 grams of protein for an adult female.
  • A 100g serving of cooked skinless, boneless breast has only one gram of saturated fat and less than four grams of total fat.

Masala and Mango marinade

  • Groovy Food’s agave nectar is harvested from the organic Blue Webber agave plant in Mexico. The core of the plant is crushed and the nectar is released and then filtered.
  • Agave has 25 per cent fewer calories than refined sugar and is naturally much sweeter (almost twice as sweet) and so much less needs to be used to achieve the same sweetness.
  • It has a naturally low GI of 17, meaning the energy release is slow and steady as opposed to refined sugars which can cause sugar highs and lows.

Naan bread

Naan bread can be a secret source of fats and calories, so pay attention to the package you buy. The ones I’ve used here are small (it’s all about moderation). If you are watching your calorie intake, why not switch the naan for a wholemeal tortilla or serve with a side of brown rice instead for a tasty alternative.

Delicious chicken skewers marinated in Groovy Foods masala and mango marinade and served on a warm naan bread with salad.

Ingredients
  • 1 chicken breast
  • 40g Groovy Food Agave Masala Mango Marinade, plus a little extra for serving
  • 2 garlic and coriander naan breads
  • Mixed salad
  • Yoghurt and mint dressing
Instructions
  1. Pre-heat your oven to 180c (fan assisted)
  2. Cut the chicken into bite-sized pieces and stir through a generous amount of marinade
  3. Set aside for the flavours to infuse (5 minutes if in a hurry, refrigerated overnight is ideal)
  4. Thread the chicken pieces onto a wooden skewer and bake for 10 minutes
  5. Turn the chicken skewers over and cook for a further 5 minutes (or until cooked right through)
  6. Just before your chicken finishes cooking, add your naan bread to the oven for 3-4 minutes to warm though
  7. To serve, brush your cooked chicken skewers with some more masala and mango marinade and serve on top of naan bread and salad
  8. Drizzle with some cool yoghurt and mint dressing
  9. Enjoy

chilli prawn & garlic linguine

Firstly, please excuse the bad lighting and poor quality photo.
But delicious buttery hot pasta and garlic prawns waits for no man woman. I’ve gotta snap quick and eat this plate o’yum :)

I’m often asked what food I eat on my weight loss journey (and now my maintenance stage). Honestly, I don’t think my menu is that exciting, but I totally get how it helps to see a ‘real mum’ and her progress, as opposed to some text book guide telling us what we should eat.

Also, it’s important to note I eat ‘real food’ and cook meals the whole family can enjoy. I make healthy substitutes where I can, but this dish was just screaming out for real butter! So that’s what I used… but olive oil would work well too. The secret? Be sure to count those indulgences into your weight loss plan :)

Chilli, Garlic & Prawn Linguine

Serves: 2

Ingredients

  • 20g butter
  • 2 red chillis finely sliced
  • 2 cloves garlic, crushed
  • 50g rocket (also known as arugula)
  • King prawns (allow a minimum of 5 per person)**
  • Linguine pasta
  • Salt and pepper to season

Method

  • In a frying pan, gently melt the butter and pour into a small bowl
  • Add your prawns, garlic and chilli to the melted butter and stir until evenly coated. Let the flavours infuse.
  • Bring a pan of water to the boil and add your linguine.
  • Whilst pasta is cooking, transfer your buttery prawns back to your frying pan and stir until cooked through.
  • Add the rocket to your pan and remove the pan from the heat. (The rocket will wilt like spinach).
  • Drain the linguine, season with salt and pepper and toss into your frying pan.
  • Stir all together to coat your linguine with your buttery, garlicky, chilli mix
  • Serve!

*** King prawns are so good, but SO expensive. If feeding a large family or to stretch the finances further, mix your king prawns with some smaller regular prawns like I did for extra deliciousness on a budget :)

From packet to plate in under 10 minutes. Now THAT is what I call fast food!

If you’re following the Slimming World Extra Easy plan this dish would be just 3 syns per portion (for the butter). All other ingredients are ‘free!

Why not make some healthy garlic bread using sliced wholemeal bread and Garlic Frylight. Don’t forget to save some syns for a cheeky glass of wine, too!

You know what I love about eggs? Apart from the fact they are utterly delicious… they are the ultimate FAST food and so versatile!

Take my scrambled eggs with sausage and thyme for example. Perfect for breakfast, but great for lunch boxes or a light supper, too. Wrap a little baking paper round and you’ve got a great snack on-the-go!

Scrambled Eggs With Sausage & Thyme

Ingredients
(Per person)

  • 2 ‘Happy Co’ eggs
  • Splash of milk
  • 2 sausages, cooked & sliced (I used Chicken Italia sausages)
  • 2 chesnut musrooms, sliced
  • 4 cherry tomatoes, quartered
  • 5 sprigs of thyme, leaves stripped from stalks
  • Salt and pepper
  • Tsp olive oil
  • 1 wholemeal tortilla wrap

Method

  • In a small frying pan, heat your olive oil and part-cook your mushrooms until soft and lightly coloured
  • Add the tomatoes and sausages to warm through
  • In a separate bowl, whisk eggs, milk, seasoning and thyme and pour into pan
  • Allow to sit for just a moment until the base begins to set
  • Using a wooden spoon, gently stir the egg mix to scramble
  • Fold a tortilla wrap in half and in half again, and serve your scramble in a tortilla cone :)

My fridge is full of stuff that needs using up. Half a roast chicken, some juicy ripe cherry tomatoes, a pack of mozzarella pearls I don’t even remember buying…

So I decided to whip up a delicious toasted sandwich for lunch this afternoon.

Chicken, tomato and mozzarella sandwich

Two thickly cut slices of fresh white bread, piled high with chicken, tomato, mozzarella and basil.

Lightly buttered on the outside and toasted in my George Forman. Man, I love those machines.

So delicious! Quick and easy, too!

If you’re veggie, or prefer meat-free you could switch the chicken for avocado. That would be yummy!
