Summer Turkey Recipe Challenge: Turkey and Sage Lumaconi

Now that summer has finally arrived, I don’t want to be stuck in the kitchen preparing family meals – I want to enjoy these lovely afternoons with the children when they get home from school.

But there are only so many summer barbecues and salads this mum can handle!

My Turkey and Sage Lumaconi is the perfect dish for this time of year. It’s fast, fresh and nutritious… and something the whole family will love!

Turkey and Sage Lumaconi

This is a super simple dish to prepare, and so quick and easy to cook.

This recipe serves our family of 4 (dad, mum, 6 yr old and 3 yr old) but is so easy to make bigger or smaller according to your needs.

You will need:

  • A splash of olive oil
  • 1 small onion
  •  A pack of turkey breast fillets (or leg meat or mince, if you prefer)
  • A few fresh sage leaves
  • Handful of frozen peas
  • 300ml chicken stock
  • Splash of white wine (optional)
  • 150ml tub double cream
  • Freshly grated parmesan
  • Lumaconi pasta (or your favourite pasta)

Preparation (3 minutes): 

  • Finely chop the onion
  • Dice the turkey into bite-sized pieces.
  • Roughly chop the sage leaves.

… see, I said this was simple!

To Cook (18 minutes):

  • Heat the olive oil in a pan and add the chopped onions. Cook gently until softened
  • Add the turkey pieces and stir until cooked
  • Add the lumaconi to a pan of  boiling water and cook for 10 minutes
  • Whilst the pasta is cooking, pour the stock and wine (optional) over the turkey and gently simmer for 5 minutes
  • Add the sage and cream to the simmering stock and stir to blend (the creamy sauce will begin to thicken slightly)
  • Reduce the heat and cook on low for a further 2-3 minutes
  • Toss the peas into the boiling pasta water for the last minute to warm through

To Serve:

Drain the pasta and stir into the turkey and creamy sauce. Finish with a sprinkling of fresh parmesan and enjoy!

The lovely big pasta shells are a perfect compliment to this dish, and fill with peas and sauce making every bite delicious!
