I’m really into my breakfasts at the moment.

After years of skipping this most important of meals, I’ve finally learned that a gallon of coffee does not substitute proper food in your belly to kick start the old metabolism for the day.

The great thing about this healthy breakfast option is that you feel like you are eating something indulgent, when it’s really loaded with good-for-you ingredients.

A parfait is an easy to make, layered treat that requires no cooking at all – only a tall glass and a few basic ingredients.

If you like yoghurt, cereal and fresh fruit – you will LOVE this healthy breakfast parfait!

Healthy Breakfast Parfait


(Serves 1)

Mullerlight fat free vanilla yoghurt
35g Kellogg’s All Bran Sultana Bran
1 small banana, peeled and sliced
8 strawberries, hulled and quartered
12 raspberries


  • Place some of your fresh fruits in the bottom of the glass
  • Top with 1/4 of your Mullerlight yoghurt
  • Add a layer of sultana bran
  • … repeat all the way to the top!

Using a healthy cereal option (Slimming World HexB choice) is important – rather than a supermarket muesli or granola – which is often loaded with hidden sugar and really not very good for you.

Between the fresh fruit and yoghurt, you really shouldn’t need the additional sweetness of granola.

Of course, you can use whatever fruit you happen to like – I personally just like the subtle sweetness and texture of bananas, strawberries and raspberries for this.

Parfaits are perfect for breakfast, but work great as an afternoon snack or after-dinner dessert.
